  • Pulido Walker, Chardonnay, Mt. Veeder Estate, Napa Valley, 2021 | 98 points (one of the best in California)
  • Château d'Yquem, Sauternes, Bordeaux, France, 2022 (375 ML) | 100 points
  • Bodega Chacra, 'Sin Azufre' Pinot Noir, Patagonia, Argentina, 2022 | 96 points (top new brand in the world of Pinot and chardonnay)
  • Conterno NERVI, Gattinara, Piedmont, Italy, 2016 | 94 points
  • Beekeeper Cellars, Hidden Hillside Reserve, Sonoma County, California, 2017 | 97 points
  • Peter Michael, L`Esprit des Pavots, Knights Valley, California, 2006 | 91 points
  • Cheval des Andes, Mendoza, Argentina, 2021 | 98 points
  • Quinta Do Noval, Vintage Porto Port, Douro, Portugal, 2018 | 97 points
Example of the pairings below.
  • A sticky triple cream with the Champagne from a neighboring village.
  • Pinot Gris - with its minerality and richness will play well with Morbier (a cheese with a thin layer of vegetable ash)
  • Top Chardonnay from California - next to something like Cowgirl Creamery Mt. Tam or other local triple-cream
  • Yquem and Roquefort, France (Sheep) - A MUST
  • Bodega Chacra Pinot Noir and a dusty milk chocolate from South America
  • NERVI from Piedmont - and something local and artisan... Special Prosciutto / Charcuterie - only brought in by the Cheese Store.
  • Beekeeper Zin will play well with a local "swiss" chocolate and hazelnuts from a special chocolatier in Beverly Hills.
  • Peter Michael - we will play off the age and another charcuterie - hyper rich and amazing.
  • Cheval and an aged gouda or Comte - we will tame this 98 point beast.
  • The port wine with its youth is fun to enjoy with a robust dark chocolate with  salted  caramel.
